An Overview of Food Chemistry
-A brief history on food chemistry:
In the 13th century the king of England passed a law that banned bakers from putting ground beans and peas as a filler their bread. This law was called The Assize of Bread. It was the first law that regulated food.
The history of modern food chemistry begins in the 18th century. This started with scientists identifying a number of chemicals that are present in foods.
In 1813, Sir Humphrey Davy wrote the first book dedicated to the food sciences. It became a foundation for food chemists worldwide.
Around the 1880s, the Society of Public Analysts was created to bring about food science to the public. Their goal was to analyze foods such as bread, wine, and milk to understand the components included in the process of creation. But by the early 20th century, food processing had changed drastically. The focus had switched to food additives and coloring.
Soon after, universities added courses dedicated to food chemistry. Nutrition research began to pick up, and similar organizations began in other countries, such as the Food Standards Agency in the UK.
